Quinoa and Ginger Carrots

Ingredients

  • 1 small onion, chopped
  • 4 cloves garlic, minced
  • 2 large carrots, chopped
  • 1 T ginger root, grated
  • 1 T oil
  • 2 c quinoa
  • 4 c water

Preparation

Step 1

1) In a saucepan, cook onion, garlic, carrots, ginger, and oil for 5 min.
2) Add quinoa and water and bring to a boil.
3) Cover and simmer on low for 20 min.
4) Fluff with a fork.
