Mashed Potato Bites

Ingredients

  • 2 cups cooked, mashed potatoes
  • 1 cup finely chopped ham, pancetta or canadian bacon
  • 1 cup shredded cheese (swiss or cheddar or both)
  • 1/2 cup mayonnaise
  • 1/4 cup milk
  • 1/4 cup minced onion
  • 1 large egg beaten
  • 1 tsp. prepared mustard
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/8 tsp. cayenne pepper (optional)
  • 3 +1/2 cups crushed corn flakes
  • For Dipping Sauce
  • 1/2 cup dijon mustard
  • 2 Tbsp. mayonnaise
  • 1/3 cup honey
  • mix ingredients chill for 2 hours

Preparation

Step 1

Preheal oven to 350F. grease 2-4 baking sheets. Mash potatoes in a bowl. Stir in remaining ingredients and mix well. Shape potato mixture into 1-inch balls. Roll each ball in cornflakes. Arrange the balls 1-inch apart on prepared baking sheets. Bake until browned, about 30 minutes. Serve with dipping sause.
