Ingredients
- 2 lbs boneless skinless chicken thighs, cut into large chunks
- Juice of 4 lemons (1/2 – 2/3 cup)
- 1/4 cup olive oil
- 1 1/2 T. Dijon mustard
- 1 T. honey
- 1 tsp. chopped fresh Greek oregano (or regular oregano)
- 1 tsp. chopped fresh thyme leaves
- 1 tsp. kosher salt
Preparation
Step 1
1. Place chicken in a large Ziploc bag.
2. Combine fresh lemon juice, olive oil, Dijon, honey, oregano, thyme, and salt. Whisk well.
3. Pour over chicken chunks, and refrigerate for at least 1 hour.
4. Thread chicken onto skewers and place on preheated grill, turning throughout cooking, until chicken is cooked through.
