Ingredients
- 4 large potatoes, peeled
- 3 tablespoons oil
- 4 tablespoons butter
- grated rind of 1 lemon
- juice of 1 lemon
- 3 tablespoons chopped fresh parsley
- 3 cloves garlic, minced
Preparation
Step 1
Cut potatoes into thin slices, less than 1/4". Cook in boiling water for 4 minutes. Drain and carefully and pat dry.
Heat oil and 3 T butter in a heavy based frying pan. Add enough potatoes to cover bottom and cook, shaking so they don't stick. When brown, remove from pan and repeat.
Combine remaining butter, lemon rind and juice, parsley and garlic in a pan and heat until butter turns pale brown. Add potatoes and toss.
