Ingredients
- 3/4 cup boiling water
- 1 cup quick cooking oats
- 1/2 cup chopped dried apricots
- 1/2 cup butter
- 1 egg
- 1 cup milk
- 2 1/2 cups all-purpose flour
- 1/2 cup firmly packed brown sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
Preparation
Step 1
Preheat oven to 400. Grease or line muffin tin.
In a medium bowl, pour boiling water over oats, apricots and butter. Stir until butter melts. Set aside to cool. Add egg and milk.
In a large bowl, combine flour, brown sugar, baking powder and salt. Add oat mixture, stirring just until blended and moistened. Do not over-mix.
Spoon batter into prepared muffin tin, filling cups to the top. Bake in preheated oven for 20 minutes.
