Cream of Cauliflower Soup

Ingredients

  • 1 large cauliflower
  • 1 lemon, juice of
  • 2 tablespoons minced onion
  • 2 celery stalks, minced
  • 1/4 cup butter
  • 1/4 cup flour
  • 4 cups chicken broth
  • 2 cups light cream, scalded
  • dash nutmeg
  • salt, to taste
  • grated parmesan cheese

Preparation

Step 1

Wash cauliflower and break into florets. Cook with lemon juice in a small amount of boiling water until tender. Drain and puree cauliflower in blender.

Saute onion and celery in butter 2 - 3 minutes. Blend in flour and stir in broth. Cook, stirring until slightly thickened. Stir in cauliflower, cream, nutmeg and salt. Garnish with parmesan cheese.
