Apricot Sour Cream Scones

Ingredients

  • 2 cups flour
  • 1/4 cup packed golden brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 5 tablespoons chilled unsalted butter
  • 2/3 cup sour cream
  • 1 teaspoon vanilla
  • 1/2 cup chopped dried apricots, or other dried fruit
  • 1 large egg, beaten

Preparation

Step 1

Preheat oven to 400.

Mix first 5 ingredients in a large bowl. Add butter and rub until it resembles coarse meal. Make a well in the centre; add sour cream and vanilla; stir using a fork until dough forms. Turn out onto lightly floured surface. Sprinkle apricots over. Knead until incorporated. Flatten into an 8" round. Cut into 8 wedges. Transfer to baking sheet. Brush with egg. Sprinkle with brown sugar. Bake until golden, about 20 minutes. Serve warm or at room temperature.
