Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 3/4 cup beer
- light olive oil for deep frying
- 4 6 oz pieces white fish fillets, skinned and boned
Preparation
Step 1
Sift the flour, baking powder and 1/2 teaspoon salt into a large bowl. Make a well in the center and gradually add the beer and 3/4 cup cold water, whisking to form a smooth batter. Cover and allow to stand for 20 minutes.
Fill a deep heavy based saucepan one-third full of oil. Heat the oil to 350. Cut each fillet in half diagonally and pat dry with paper towels. Dip the fish in the batter, gently shaking off the excess. Deep-fry for 3-4 minutes, depending on the thickness, or until crisp, golden and cooked through. Drain on paper towels.
