Ingredients
- 3-4 lbs small RED POTATOES
- 1 pkg “REAL BACON” (found in the salad dressing aisle)
- 1 bunch GREEN ONIONS (about 8-10)
- 8 oz cheese CRUMBLES (use cheddar)
- 8 oz cheese SHREDS (use cheddar)
- 3 oz SOFTENED CREAM CHEESE (the very small block)
- 32 oz SOUR CREAM (you may not use all of it)
- 1/2 cup MIRACLE WHIP
- 2 Tbls McCormick HAMBURGER SEASONING
- SALT AND PEPPER TO TASTE
Preparation
Step 1
Boil whole potatoes (skins on) until just tender (DO NOT OVERBOIL OR THEY WILL FALL APART). Cool until cool enough to handle. Cut into bite sized pieces (leave skins on).
In a medium sized bowl, mix cream cheese, mayo , about half of the sour cream, and the seasoning. Pour over the potatoes and mix in along with the cheeses, onions, and bacon. If it seems too dry, start adding more sour cream. Season to taste with salt and pepper and more hamburger season, if needed.
If you like it extra cheesy, add more crumbles. I usually garnish with more bacon, cheese, and green onions.
Chill well before serving.
