Ingredients
- 2 cups quinoa, cooked
- 2 Tablespoons sesame seed oil
- Snow peas
- Carrots
- Corn
- 1/2 Onion
- 1 pound shrimp
- 3 eggs, fried
- 1/4 cup soy sauce
Preparation
Step 1
Heat the sesame seed oil in a skillet and saute the onions until they become translucent. Add the quinoa and the rest of the vegetables and cook for 5 minutes. Stir in the shrimp and cook until the shrimp turn pink, about 3 minutes. Add the egg and cook the mixture for 3 minutes. Add soy sauce, cooking for another 3 minutes.
(I would cook the shrimp and egg in a separate skillet while cooking the vegetables and quinoa. Use the big pot to cook the vegetables and add everything into that.)
