Broccoli Salad

Ingredients

  • 4 c. broccoli florets, broken into bite sized pieces
  • 2 c. mushrooms, sliced
  • 1/2 lg. red onion, chopped
  • 6 slices bacon, cooked & crumbled
  • 1/2 c. raisins
  • 11 oz. Mandarin oranges, drained
  • 1/2 c. slivered almonds, toasted
  • 1/4 t. mustard*
  • 1 egg
  • 1 egg yolk
  • 1/2 c. sugar*
  • 1 1/2 t. cornstarch*
  • 1/4 c. water*
  • 1/4 c. vinegar*
  • 1/2 c. mayonnaise*

Preparation

Step 1

Into the top of a double boiler, whisk egg, sugar, cornstarch & mustard. Add vinegar and water and cook over heat until thick like pudding. Add mayonnaise and butter. Chill.

Toss all ingredients together, saving the raisins and toasted almonds until the last minute, in order to preserve their flavor and texture.
