Ingredients
- 1 tbsp olive oil
- 4 tbsp butter
- 1 c chopped onion
- 1/2 c chopped celery
- 2 cloves garlic minced
- 1/4 c flour whisk in
- 1 qt skim milk - whisk
- 1 c cooked chicken
- 1/2 tsp dried parsley
- 1/2 tsp dried thyme
- 1/4 tsp ground nutmeg
- 1 tsp salt
- 1 c shredded carrots
- 1 pkg potato gnocchi
- Stir above ingredients
- Add 1 c spinach stir again
Preparation
Step 1
Put first 5 ingredients into a large soup pot cook up
Add flour and whisk in skim milk. Simmer until thick.
Slowly whisk in 14 oz. chicken broth.
Add in remaining ingredients.
Cook till carrots and spinach are cooked a few minutes
