Green Beans & Potatoes with Rosemary & Lemon

Ingredients

  • 1 1/2 lbs cooked red potatoes
  • 2 T OO
  • 1 T minced garlic
  • 1 1/2 T finely chopped fresh rosemary
  • 1 t grated lemon zest
  • 1/4 t crushed red pepper flakes
  • 1 lb fresh green beans, trimmedd & blanched
  • 2 t fresh lemon juice
  • Coarse salt, to taste

Preparation

Step 1

Cut potatoes lengthwise into quarters; set aside.

In a large skillet, heat oil on med; add garlic & cook 30 seconds. Add rosemary, lemon zest & crushed red pepper; cook 1 minute or until fragrant. Add potates & green beans and cook, stirring frequently, for 4 min or until hot & coated w/seasoning. Sprinkle with lemon juice. Season with salt. Serve warm
