Heart Smart Impossibly Easy Coconut Pie

Ingredients

  • 3/4 cup sugar
  • 1/2 cup coconut
  • 1/2 cup Bisquick Heart Smart® mix
  • 1 1/2 cups fat-free (skim) milk
  • 3/4 cup fat-free egg product
  • 1 1/2 teaspoons vanilla
  • 1 cup frozen (thawed) fat-free whipped topping, if desired

Preparation

Step 1

1. Heat oven to 350°F. Spray 9-inch glass pie plate with cooking spray. In medium bowl, stir all ingredients except whipped topping with wire whisk or fork until blended. Pour into pie plate.
2. Bake 50 to 55 minutes or knife inserted in center comes out clean. Cool 1 hour. Refrigerate 4 hours or until well chilled. Garnish with whipped topping. Store in refrigerator.
High Altitude (3500-6500 ft): Bake 53 to 58 minutes.
