MINI-CHERRY CHEESECAKES

Ingredients

  • 1/2 Cup Sugar
  • 1 1/2 T. Cornstarch
  • 1-1 lb can Red Tart Cherries
  • 3/4 Cup Chocolate or Gingersnap Crumbs
  • (12 cookies)
  • 1 8 oz. Cream Cheese, softened
  • 1/3 Cup Sugar
  • 1 Egg
  • 2 tsp. Lemon Juice
  • 1/2 tsp. Vanilla

Preparation

Step 1

Combine 1/2 cup sugar & cornstarch in a saucepan. Stir in cherries & juice. Cook stirring constantly, until mixture boils & thickens. Add red coloring & cool.

Line 12 muffin cups with paper cups, spoon about 1 T. cookie crumbs into each cup.

Beat together cream cheese, 1/3 cup sugar, egg, lemon juice & vanilla until smooth. Pourover crumbs. Bake in 375 oven for 15 min. or until set. Cool. Top each with 3 T. cherry sauce.
