Ingredients
- 1 C boiling water
- 1 C natural bran
- 1/2 C mashed banana
- 1/3 C brown sugar
- 1 egg, beaten
- 2 T vegetable oil
- 1 tsp vanilla
- 1 rind of lemon, grated
- 1 C flour
- 1/3 C skim milk powder
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1/2 tsp salt
Preparation
Step 1
Pour water over bran. Let stand 1 hours. Mix in banada, sugar, egg, oil, vanilla and rind.
Mix together dry ingredients. Add to bran mixture, stirring only til combined. Spoon into muffin cups.
Bake in 400 oven for 15 - 18 minutes.
