Ingredients
- black bean salad
- Recipe
- 2 garlic cloves, smashed
- 1 diced jalapeno
- 1 t. cumin seeds
- 15 oz. can black beans
- 1 1/2 c. diced cucumbers
- grape tomatoes
- 4 chopped scallions
- squeeze lime juice
- chopped cilantro
- salt
- olive oil
- greens
Preparation
Step 1
Heat small amount of olive oil in skillet. Heat over medium heat, garlic, jalapeno, and cumin for about 5 minutes. Toss beans, cucumber, tomato, scallions, lime juice, and cilantro in bowl. Mash the hot garlic mixture and add to beans. Season with salt and toss with salad greens.
