RHUBARB CAKE

Ingredients

• FILLING :
• 2 cups flour
• 1 tsp baking powder
• 1/2 cup butter
• 1 egg, beaten
• Mix the above ingredients together with a fork or pastry blender. Reserve I cupful for the top of cake. Flatten the rest of the mixture into a 8 by 10 inch pan.
• 4 cups rhubarb, chopped
• 1/2 cup flour
• 2 eggs, beaten
• 1 1/2 cups sugar
• 1/2 cup melted butter

Preparation

Step 1

Mix the filling ingredients together and spread over the first mixture. Sprinkle the reserved first mixture over the top of filling, then sprinkle with a little bit of sugar and cinnamon. Bake at 375 degrees for 1 hour.
(FRESH PLUMS CAN ALSO BE USED INSTEAD OF RHUBARB)
