CRANBERRY ORANGE LOAF

Ingredients

  • 4 cups sifted flour
  • 3 tsp baking powder
  • 2 tsp salt
  • 1/2 cup shortening melted (OR SALAD OIL)
  • 2 tbsp Orange rind
  • 2 cups Cranberries (or BLUEBERRIES)
  • 2 cups white sugar
  • 2 eggs well beaten
  • 1 1/2 cups fresh Orange juice
  • 1 tsp baking soda

Preparation

Step 1

Sift together flour, sugar, baking powder, baking soda, and salt. Add orange juice, shortening, eggs and rind Stir with fork, just to dampen mixture. Carefully fold in Cranberries. Spoon into greased muffin pan. Bake at 350 degrees for 20 to 25 minutes or until muffins test done.
* - half the batter and pour it into 2 (9x5x3 inch) greased pans and bake at 350 degrees for 1 1/2 hours.
