Ingredients
- Salad:
- 4 large ripe tomatoes (about 2 1/2 pounds)
- 1/2 cup Green Goddess Dressing, recipe follows
- Dressing:
- 1/2 ripe avocado, peeled
- 3/4 cup lowfat buttermilk
- 3 tablespoons white wine vinegar
- 2 tablespoons coarsely chopped fresh tarragon leaves
- 1 scallion (white and green parts), coarsely chopped
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
Preparation
Step 1
Core, then cut the tomatoes into wedges and put them into a large bowl. Toss with the dressing and serve.
Dressing:
Put all of the ingredients into a blender and blend until smooth. Any leftover dressing will keep well in the refrigerator for 2 to 3 days in an airtight container
