Tomatoes with Green Goddess Dressing

Ingredients

  • Salad:
  • 4 large ripe tomatoes (about 2 1/2 pounds)
  • 1/2 cup Green Goddess Dressing, recipe follows
  • Dressing:
  • 1/2 ripe avocado, peeled
  • 3/4 cup lowfat buttermilk
  • 3 tablespoons white wine vinegar
  • 2 tablespoons coarsely chopped fresh tarragon leaves
  • 1 scallion (white and green parts), coarsely chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Preparation

Step 1

Core, then cut the tomatoes into wedges and put them into a large bowl. Toss with the dressing and serve.

Dressing:
Put all of the ingredients into a blender and blend until smooth. Any leftover dressing will keep well in the refrigerator for 2 to 3 days in an airtight container
