Ingredients
- Zucchini Stuffing Casserole
- 4 cups cubes zucchini
- 3/4 cup shredded carrots
- 1/2 cup chopped onions
- 6 T margarine
- 2 1/2 cups seasoned stuffing cubes
- 1 can cream of chicken soup
- 1/2 cup sour cream
Preparation
Step 1
Cook zucchini in small amount of salted water until tender. Drain; cook carrots & onions in 4 T until tender. Remove from heat. Stir in 1 ½ cups stuffing cubes, soup & sour cream. Add zucchini & turn into 1 ½ quart greased casserole. Melt remaining margarine & add on top of casserole. Bake at 350 for 30-40 minutes until mixture is bubbly & top is lightly browned.
