Pumpkin Scones, Nigella Lawson

Ingredients

  • You will need to cook about 250g pumpkin for this recipe.
  • •40g butter
  • •1/4 cup caster sugar
  • •1 egg
  • •3/4 cup cook mashed pumpkin
  • •2 1/2 cups self-raising flour
  • •1/2 teaspoon ground nutmeg
  • •1/3 cup milk, approximately

Preparation

Step 1

ethod1.Lightly grease two 20cm round sandwich pans.
2.Beat butter and sugar in a small bowl with electric mixer until light and fluffy; gradually beat in egg.
3.Transfer mixture to large bowl. Stir in pumpkin, then sifted dry ingredients and enough milk to make a soft sticky dough.
4.Turn dough onto floured surface, knead lightly until smooth.
5.Press dough out to about 2cm in thickness, cut 5cm rounds from dough. Place rounds, just touching, in prepared pans. Bruch tops with a little milk.
6.Bake scones in a very hot oven for about 15mins.
Serves: Makes about 16
