Ingredients
- 3 cups diced, unpeeled zucchini, shredded
- 1 large chopped onion
- 1/2 cup parmesan cheese
- 1/2 cup grated cheddar cheese
- 1/2 cup oil
- 1 cup bisquik
- 4 eggs beaten
- 1/2 cup minced parsley
- 1 tsp salt
Preparation
Step 1
highly salt the zucchini and place in a colander or in cheese cloth. let sit for 10 - 15 minutes. Drain as much of the liquid as possible.
Combine all ingredients together until zucchini is well coated. Pout into a LARGE greased glass pan.
Bake at 350° for 25 - 40 minutes, depending on how wet the mixture is. Knife should come out clean when done.
