banana nut bread

Ingredients

  • 1/2 c butter, room temp
  • 1 c C&H sugar
  • 2 eggs
  • 3 medium bananas, mashed
  • 2 c Gold Medal flour
  • 1 t baking soda
  • 1/2 t salt
  • 1 c walnuts, optional

Preparation

Step 1

Mix butter, sugar, & eggs. Beat hard till light n creamy (w/no sugargranules left). Stir in mashed bananas. Add dry ingredients beating until smooth. Pour into greased/floured loaf pan. Bake at 350° 60-70 min. Remove from pan and cool on rack.
Instant Pot: grease/butter/spray a pan of your choice. I use my 7" FatDaddio cheesecake pan with removable bottom. Line the bottom w/parchment paper. Pour in batter. Pour in 1-2 cups water into IP liner. Place cake pan on trivet, using foil sling, close and lock lid, seal vent, manual high pressure, 50 - 60 min*, 10 min NPR, then QR. Remove carefully from IP. Remove cake from pan. Let cool on rack...or not if you like it hot.
*pressure cooking time will vary depending on whether you use nuts, how big the bananas were, altitude, etc.
