Spicy Threaded Beef

Ingredients

  • 1 1/2 lbs flank steak
  • 1/4 C low soduim soy sauce
  • 1/4 C Tequila
  • freshly squeezed juice of 2 limes
  • 3 small hot chilies, seeds removved and chopped fine
  • 4 garlic cloves, minced
  • 1 T finely grated gingerroot
  • 1 T canola oil
  • 12 bamboo skewers, soaked
  • 1/2 C orange juice
  • 1 T brown sugar, packed
  • 2 tsp cornstarch

Preparation

Step 1

Cut steak on diagonal across grain into 1/2 inch thick slices. Place in sealable plastic bag.

combine next 7 ingredients in small bowl. Pour over beef strips. Seal bag. marinate in fridge for several hours or ovvernight, turning several times

Drain and reserve marinade. Push beef strips onto skewers, accordion style. Strain remaining marinade through sieve. Discard solids. Add orange juice to marinade in small saucepan. Bring to a boil, stirring until thickened.

Preheat lightly sprayed electric grill to medium-high. Place skewers on grill. Cook for about 3 minteus per side, basting occasionally with thickened sauce until desired doneness. Reheat remaining sauce to boiling before serving.
