Ingredients
- 1 spaghetti squash, cooked until soft (liquid removed)
- 1 Tbsp olive oil
- 2 Tbsp Parmesan cheese
- 1 egg, beaten
- 2/3 cup cottage cheese or 1/2 cup ricotta
- 1 garlic clove, minced
- 1/2 cup onion, diced
- 1/2 cup green or red bell pepper, diced
- 1/2 lb lean ground turkey
- 1 cup canned tomatoes, diced, undrained
- 1/4 cup tomato paste
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 1/4 cup mozzarella cheese, shredded
Preparation
Step 1
1. Stir oil, Parmesan cheese and egg into cooked spaghetti squash. Mix well.
2. Spray an 8" pie plate or 7x9" baking dish with non-stick spray. Spread squash mixture over bottom and up sides to form a crust.
3. Spread cottage cheese (or ricotta) over bottom of crust.
4. In saucepan cook garlic, onion, pepper and meat together until cooked through.
5. Add tomatoes, tomato paste, basil and oregano to pan. Cook until heated through.
6. Spoon meat-tomato mixture over cheese.
7. Bake at 350 for about 20 minutes.
8. Sprinkle mozzarella cheese over top and bake another 5 min.
