Fennel Slaw Salad

Ingredients

  • 2 T golden raisins
  • Juice of 1 orange
  • 2 to 3 T ot water
  • 2 bulbs fresh fennel, trimmed of tops, cored and thinly sliced lengthwise
  • 1 medium head radicchio lettuce, shredded
  • 4 scallions, thinly sliced on an angle
  • handful parsley, chopped
  • 3 T pignali nuts, toasted
  • 2 T balsamic vinegar
  • 3 T extra-virgin olive oil
  • Coarse salt and freshly ground black pepper, to taste

Preparation

Step 1

Place raisins in a small dish,m vocer with the orange juice and hot water. Let raisins plump and soften, 5 minutes.

Combine fennel, radicchio, scallions, and parsley in a bowl. Add raisins and nuts to slaw and toss with vinegar and oil to lightly coat. Season with coarse salt and pepper.
