Pork or Chicken Souvlaki

Ingredients
- 1 pork tenderloin (for pork souvlaki) or 4 small boneless, skinless chicken breasts (for chicken souvlaki)
- Salt and pepper
- Dried oregano
- Olive oil
- Fresh lemon juice
Preparation
Step 1
1. Cut pork or chicken into bite size pieces.
2. Put the meat into a bowl and drizzle with olive oil. Season well with salt, pepper and oregano.
3. Stir ingredients to evenly coat the meat. Pour marinated meat into a resealable bag and refrigerate overnight.
4. Divide the meat into 4 servings and skewer on either metal or wooden skewers. If using wooden skewers, soak them in water for half an hour prior to using to prevent burning on the grill.
5. Grill the skewers on medium heat until meat is well done. While meat is grilling, prepare a combination of equal parts olive oil to equal parts lemon juice. Baste the skewers with this dressing while meat is grilling.
6. Serve on pita bread with tzatziki sauce, sliced tomatoes and onions.
