Ingredients
- 1 pound of Yukon gold potatoes
- 1 tablespoon salt
- 1 package (5 ounces) fresh baby spinach
- 1/4 cup butter, melted
Preparation
Step 1
In a large pot, cover the potatoes, scrubbed and chopped, with water. Add the salt and cover; heat to boiling on high. Boil 15 minutes or until very tender, then stir in the baby spinach. Drain, then mash with the melted butter.
