    pound of Yukon gold potatoes

    tablespoon salt

  • 1

    package (5 ounces) fresh baby spinach

  • 1/4

    cup butter, melted

Directions

In a large pot, cover the potatoes, scrubbed and chopped, with water. Add the salt and cover; heat to boiling on high. Boil 15 minutes or until very tender, then stir in the baby spinach. Drain, then mash with the melted butter.
