Black Bean Brownies

Ingredients

  • 15 ounce black beans, drained and rinsed
  • 3 eggs
  • 3 T canola oil
  • 3/4 c sugar
  • 1/2 c unsweetened cocoa powder
  • 1 t vanilla
  • 1/2 t baking powder
  • 1/2 c semi-sweet chocolate chips

Preparation

Step 1

preheat to 350 degrees
grease and 8x8 baking pan
blend black beans in a food processor
add eggs, oil, sugar, cocoa, vanilla, baking powder and process till smooth
add 1/4 c of chips and pulse a few times
pour batter into pan and sprinkle with remaining chips
bake 30-35 minutes
cool in plan
