French Dip Roast Beef Sandwiches

Ingredients

  • 2 T butter
  • 1 shallot, chopped
  • 1 1/2 T flour
  • 1 shot dry sherry
  • 2 cans beef consomme
  • 1 1/2 pounds deli-sliced roast beef
  • Steak seasoning blend or salt and black pepper
  • 4 torpedo sandwich rolls, split

Preparation

Step 1

In a large shallow skillet over medium heat, melt the butter. Saute shallots in the butter 2 minutes. Add flour and cook 1 minute longer. Whisk in sherry and cook liquid out. Whisk in consomme in a slow stream. Bring sauce to a bubble and allow to simmner over low heat.

Pile roast beef loosely across a large work surface and season. Dip[ meat into sauce and pile into rolls. Serve with extra sauce on side.
