Spinach and Cheese Cannelloni

A fairly basic pasta sauce is all that is needed.

Ingredients

  • 250 g fresh ricotta
  • 1/4 cup grated cheese
  • 250 g frozen spinach, thawed and well drained
  • 1 egg, beaten
  • pinch nutmeg
  • Salt and pepper to taste
  • 1 clove crushed garlic
  • 1/4 cup grated fresh parmesan or mossarella cheese
  • fresh lasagne sheets
  • 1 x 600ml jar pasta sauce

Preparation

Step 1

Mix first seven ingredients together in a bowl.
Cut lasagne sheets in half and place a few tablespoons of mixture down one side and roll up to make a tube.
Repeat with rest of mixture and lasagne sheets.
In a greased baking dish, spread about a quarter of the pasta sauce and then a layer of cannelloni side by side.
Pour over remaining sauce.
Sprinkle with grated parmesan or mozzerella cheese.
Bake at about 190* for 25-35 minutes. test with fork.
