Pulled Pork & Sauce

Ingredients

  • Sauce:
  • 4 lbs boneless pork shoulder
  • 2 T coarse salt
  • 5 garlic cloves
  • 2 T safflower oil
  • 1 T sugar
  • 2 T brown sugar
  • 1 T paprika
  • 3/4 t black pepper
  • 1/4 t dry mustard
  • 1/4 t dried thyme
  • 1 C white vinegar
  • 1/3 C ketchup
  • 1/3 C brown sugar
  • 1 T coarse salt
  • 3/4 t crp
  • 1 t black pepper
  • sandwich buns

Preparation

Step 1

Season pork the night before with salt. Cover with wrap and refrigerate overnight.
Next day stir together garlic and oil. Mix sugars and spices. Rub oil mix over pork, then sugar mix. Cook pork til inner temp is 200, about 7-8 hours.
Shred meat, make sauce, serve with coleslaw.
Sauce: whisk together all ingredients in bowl, toss pork with 1 C sauce. Pile pork on buns, top with slaw and sauce.
