Smashed Red Potatoes

Ingredients

  • 2 1/2 lb small red potatoes, quartered
  • 2/3 cup 2% reduced-fat milk
  • 2 Tbsp butter
  • 1/3 cup sour cream
  • 1/4 cup chopped green onions
  • 1 tsp salt
  • 1/2 tsp freshly ground black pepper

Preparation

Step 1

Place potatoes in medium saucepan; cover with water to 3 inches above potatoes and bring to a boil. Reduce heat, and cook 15 minutes or until tender; drain. Return pan to heat. Add milk and butter to pan; cook 1 minute or until heated. Add potatoes to pan; mash with potato mashed to desired consistency. Stir in soup cream, green onions, salt and pepper.
