Berry Quinoa Salad

Ingredients

  • Salad:
  • 1 1/2 cups dry quinoa
  • 3 cups water
  • 1/2 cup chopped walnuts, toasted
  • 1/2 cup dried cranberries
  • 2 stalks celery, chopped
  • 1/4 cup sunflower seeds
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro
  • Dressing:
  • 2 tbsp olive oil
  • 2 tbsp flax or hemp oil
  • 4 tbsp honey
  • 1/4 cup orange juice
  • 1/2 tsp cinnamon
  • 1/2 tsp cumin
  • 1/2 tsp nutmeg

Preparation

Step 1

1. Pour water and quinoa into pot and bring to boil. Reduce to simmer, cover and cook for approximately 15 minutes.

2. Mix quinoa, walnuts, cranberries, celery, sunflower seeds, green onion and cilantro in a large bowl.

3. In a separate bowl, mix the dressing ingredients with a whisk. Pour over salad and mix.

May be served immediately or covered and refrigerated overnight.
