Basil-Mint Cucumber Salad

Get creative and add shredded cooked chicken or shrimp to the salad and you have a meal. This is a great side for any meal.

Ingredients

  • 1 large english cucumbers, chopped
  • 3 Tbsp rice vinegar
  • 1 Tbsp sugar (or to taste)
  • 1 tsp kosher salt
  • 1 medium lime zest
  • 1 tsp fresh ginger, grated
  • 1 large garlic clove, grated
  • 1/2 small hot chili pepper. chopped
  • 1 Tbsp fresh basil leaves,torn
  • 1 Tbsp fresh mint, chopped

Preparation

Step 1

1. Mix all ingredients together. Chill for at least 15 minutes.
