Basil-Mint Cucumber Salad

Ingredients
- 1 large english cucumbers, chopped
- 3 Tbsp rice vinegar
- 1 Tbsp sugar (or to taste)
- 1 tsp kosher salt
- 1 medium lime zest
- 1 tsp fresh ginger, grated
- 1 large garlic clove, grated
- 1/2 small hot chili pepper. chopped
- 1 Tbsp fresh basil leaves,torn
- 1 Tbsp fresh mint, chopped
Preparation
Step 1
1. Mix all ingredients together. Chill for at least 15 minutes.
