Goat Cheese and Tomato Bruchetta

Ingredients

  • 2 T. olive oil
  • 1/2 lb. goat cheese
  • 1/2 lb. cream cheese
  • 1 clove garlic crushed
  • 2 T. olive oil
  • 1/2 medium onion diced
  • 1 -16 oz. can tomato in juice
  • 1 fresh tomato chopped
  • basil

Preparation

Step 1

Mix together
2 T. olive oil
1/2 lb. goat cheese
1/2 lb. cream cheese
1 garlic clove crushed

Saute onion in olive oil. Add canned and fresh tomato and basil. Cook for 45 min. Stir. Place in baking dish and add 3 spoonfuls of cheese. Bake 350 for 25 minutes.

Spoon on top of toasted bread
