COLD CUCUMBER SOUP

Ingredients

  • 3 Cucumbers, peeled seeded & coarsely chopped
  • 1 yellow bell pepper, seeds removed, coarsely chopped
  • 2 green onion, chopped
  • 1 jalapeno pepper, minced
  • 2 tablespoons cilantro, finely chopped
  • 1 tablespoon fresh mint, finely chopped
  • 1 tablespoon fresh dill, finely chopped
  • 1 teaspoon EMeril's essence (recipe in separate area)
  • 1 teaspoon salt
  • 1/2 teaspoon cayenne
  • 1 1/2 cups plain yogurt
  • 1 cup sour cream
  • 1 1/2 tablespoons extra virgin olive oil
  • 1 teaspoon white wine vinegar

Preparation

Step 1

1. Combine all ingredients in a large bowl. Working in batches, puree the ingredients until very smooth. Transfer the soup to the refrigerator until well chilled, at least 2 hours. Taste and adjust the seasoning if necessary.
