Ingredients
- 3 Cucumbers, peeled seeded & coarsely chopped
- 1 yellow bell pepper, seeds removed, coarsely chopped
- 2 green onion, chopped
- 1 jalapeno pepper, minced
- 2 tablespoons cilantro, finely chopped
- 1 tablespoon fresh mint, finely chopped
- 1 tablespoon fresh dill, finely chopped
- 1 teaspoon EMeril's essence (recipe in separate area)
- 1 teaspoon salt
- 1/2 teaspoon cayenne
- 1 1/2 cups plain yogurt
- 1 cup sour cream
- 1 1/2 tablespoons extra virgin olive oil
- 1 teaspoon white wine vinegar
Preparation
Step 1
1. Combine all ingredients in a large bowl. Working in batches, puree the ingredients until very smooth. Transfer the soup to the refrigerator until well chilled, at least 2 hours. Taste and adjust the seasoning if necessary.
