MUSSELS IN LEMON BUTTER

  • 2 dozen fresh mussels, whole
  • 1/2 cup white wine
  • Juice from 1 fresh lemon
  • 4 cloves garlic, minced
  • 1 small onion, thinly sliced
  • parsley

Preparation

Step 1

1. Rinse mussels and let drain. In a large skillet or pot heat wine. Add garlic, onion and parsley. Bring to a boil and add mussels. Simmer 2 minutes stirring occasionally so mixture doesn't stick to skillet. Add mussels to mixture and partially cover skillet to cook some more. As mussels, open remove from skillet and place on a platter. After doing that, pour sauce from skillet over mussels again and serve hot!

2. Serve with Italian Bread
