Bacon Wrapped, Salsa Stuffed Chicken Breasts

Ingredients

  • Salsa:
  • 2 Chicken breasts
  • 6 Bacon slices
  • 1 1/2 Plum tomatoes, peeled, seeded, chopped
  • 1 Green onion, sliced
  • 1/2 Jalapeno pepper, seeded & thinly sliced
  • 1 Garlic clove
  • 1/2 Lime zest
  • 1 T Cilantro, fresh, minced

Preparation

Step 1

Preheat oven to 400F degrees. Combine all salsa ingredients in a bowl & mix well.
Butterfly chicken & flatten. Fill each with salsa mix & close them up.
Roll the bacon strips around each breast & pin them in place with toothpicks.
Place chicken in baking pan & bake for 30-35 mins or until thermometer reads 170F degrees.
then broil for 5-6 mins until bacon is crisp.
Serve with salsa.
