Parmesan Potato Snacks

Ingredients

  • 3 tbsp butter, melted
  • 2 tbsp Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp thyme leaves (oregano, basil, or rosemary)
  • salt and freshly ground black pepper
  • 8-10 gold potatoes sliced thin (about 1/16 inch thick)

Preparation

Step 1

Preheat oven to 350°F. Butter 12-cup muffin tin and set it aside.

Cut potatoes into thin slices then put into a large bowl. Add the melted butter, Parmesan cheese, and spices. Toss the mixture to coat the potatoes evenly.

Layer the potatoes into stacks and place them into the muffin cups. Sprinkle with more salt and pepper to taste.

Bake your Parmesan potato snacks for 55-60 minutes or until the edges are golden brown and the center is tender.

Let the potato snacks sit for about 5-minutes before serving. Garnish with some extra Parmesan cheese and thyme.
