Lemon Ice Box Dessert

Ingredients

  • 6 eggs separated
  • 1/2 cup lemon juice
  • grated rind of 1 lemon
  • 1/8 teaspoon salt
  • 1 cup sugar
  • 2 cups heavy cream whipped
  • vanilla wafer cookies crushed

Preparation

Step 1

Combine egg yolks (well beaten), lemon juice, lemon rind, salt, and sugar. Cook very slowly until consistency of custard (coats spoon). Let cool. Fold in 6 stiffly beaten eggs whites and cream. Put crushed vanilla wafers on bottom of 2 ice trays. Fill with dessert and sprinkle with crushed vanilla wafers on top. Place in freezer.
