Ingredients
- 1 1/2 cups all-purpose flour
- 3/4 cup whole-wheat flour
- 1/4 cup dark brown sugar firmly packed
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon ground cinnamon
- 2 medium ripe bananas mashed
- 2 tablespoons canola oil or corn oil
- 1 egg white
- 1 (8 oz) can crushed pineapple, well drained optional
- 2 cups chopped pecans optional
Preparation
Step 1
Preheat oven to 350 F. Spray 9x5 loaf pan with cooking spray. In large bowl, combine all of the dry ingredients and mix well. In a small bowl, mix bananas, oil, and egg white until well blended. Add banana mixture, pineapple, and pecans to dry ingredients, stirring just enough to combine. Do not overmix. Using a rubber spatula, scrap the batter into the prepared pan. Bake for 50-55 minutes or until top is golden. (Test for readiness by inserting a toothpick in the center, if comes out clean it is done.) Put pan on a wire rack for 10 minutes to cool. Turn loaf out onto rack and cool completely.
For a crumb topping: Stir 2 tablespoons each of whole-wheat flour and granulated sugar plus 1 tablespoon of butter until crumbly. Sprinkle over batter before putting pan into oven.
