Plantation Green Beans

Ingredients

  • 6 slices bacon, cut up
  • 3/4 cup scallion rounds
  • 1 bag whole green beans
  • 1/2 teaspoon salt
  • 3/8 teaspoon pepper
  • 2 1/2 teaspoons red wine vinegar

Preparation

Step 1

Fry bacon pieces until crisp and remove with a slotted spoon. Drop onions into the bacon fat and cook for 3 to 4 minutes. Add the beans, and stir until coated with fat. Cover and cook over medium heat for 10 minutes. Uncover and cook until the beans are tender. Sprinkle with salt and pepper, stir in vinegar, remove from heat. Garnish with bacon bits.
