Ingredients
- Sun-dried tomato mixture:
- a head of cabbage
- 3 carrots
- 1 scant cup (200 ml) sun-dried tomatoes, soaked (4 hours)
- Avocado Dressing:
- 1 avocado
- 2 dates
- 1/2 tablespoon apple cider vinegar
- 3/4 cup water
- 2 teaspoons lime juice
Preparation
Step 1
Separate cabbage leaves- how many you use depends on how hungry you are and how large the cabbage is.
Grate the carrot coarsely and put them in a bowl. Mix the sun-dried tomatoes with the oil into a consistency resemble pesto or tapenade.
Blend the ingredients for the avocado dressing to a smooth consistency.
Place in a bowl. Take a cabbage leaf and put on some shredded carrots and a dab of sun-dried tomato paste. Top with avocado sauce and roll it all together into a wrap.
