Carrot Cake Oatmeal Cookies

important to use the spoon and level method with the flour and oats, otherwise you will end up with too much flour and oats. Fill your measuring cup with a spoon and level it off. Don't dip the measuring cup into the flour container.
Make your own instant oats by pulsing old fashioned in a processor 5-8 times.

Ingredients

  • 1 c instant oats
  • 3/4 c whole wheat flour
  • 1 1/2 t baking powder
  • 1 1/2 t cinnamon
  • 1/8 t salt
  • 2 T coconut oil or unsalted butter, melted and slightly cooled
  • 1 large egg, room temp
  • 1 t vanilla
  • 1/2 c maple syrup
  • 3/4 c grated carrots (about 1 med)

Preparation

Step 1

In a med bowl, whisk together the oats, flour, baking powder, cinnamon, and salt. In a sep bowl, whisk together the coconut oil, egg and vanilla. Stir in the maple syrup until thoroughly incorporated. Add in the flour mixture, stirring until just incorporated. Fold in the carrots. Chill the dough for at least 30 min.
Preheat oven to 325 and line baking sheet with parchment paper or silpat.
Drop the dough into 15 rounded scoops on the sheet. If chilled longer than 1.5 hours then flatten them a little. bake for 12-15 min. Cool for at least 15 min on the baking sheet.
