Ingredients
- vegetable oil
- 1/2 c whipping cream
- 1 egg
- 1 t vanilla
- 1 c self rising flour
- 1/3 c self rising corn meal
- 1/3 c sugar
- 1 1/2 c fresh blueberries
- powdered sugar
Preparation
Step 1
Heat 2-2 1/2 in of oil in deep heavy saucepan over med high heat until oil temp is 375 and adjust heat to maintain temp.
Meanwhile, combine cream, egg and vanilla in small bowl; beat until well blended. Combine flour, cornmeal and sugar in large bowl; stir into cream mixture just until moistened. Fold in blueberries.
Drop batter by heaping tablespoons into hot oil. Fry 3 to 4 fritters at a time until golden brown, turning once. drain on paper towels. Sprinkle with powdered sugar.
