Tuna Rice Special

Ingredients

  • 1 c. rice
  • 2 chicken boullon cubes
  • 1 1/2 c. water
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 c. chopped celery
  • 1/2 c. stuffed olives
  • 3 Tbsp. chpped green pepper
  • 1 3-oz. can (3/4 c.) broiled mushrooms
  • 1 6 1/2 or 7-oz. can (I cup) tuna

Preparation

Step 1

Put rice, bouillon cubes, water and seasonings into a heavy 3-quart saucepan. Add celery, olives, green pepper, mushrooms plus liquid, and tuna. Cover tightly and bring to a boil. Turn heat down and simmer for 20 mins. Garish with green pepper rings, if desired.
