ZUCCHINI COOKIES

  • 3/4 cup butter or margarine
  • 1 1/2 cups sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 1/2 cups grated zuzzhini, drained
  • 2 1/2 cups flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 cup almonds, coarsely chopped
  • 6 ounces bag chocolate chips
  • powdered sugar

Preparation

Step 1

Cream butter and sugar. Beat in egg and vanilla. Stir in grated zucchini, flour, cinnamon, salt and baking powder. Add almonds and chocolate chips. Drop by heaping teaspoons into a greased cookie sheet. Bake at 350 for 15 minutes or until lightly browned. Cool on wire rack. Sift powdered sugar over cookies.
